YVONNES VEGAN HAGGIS......

( Serves 4-6 )

 

INGREDIENTS..

1 LARGE ONION (FINELY CHOPPED )

1 CLOVE GARLIC

2 MEDIUM CARROTS

1 MEDIUM SWEDE

 

2 BAY LEAVES

1 TIN RED KIDNEY BEANS

(OR 6oz DRY SOAKED OVERNIGHT)

4 oz RED LENTILS BOILED TILL

SOFT

3 oz WALNUTS FINELY CHOPPED

4 oz MEDIUM OATMEAL

 

2 LARGE tbs VEGAN MARG

STOCK CUBE

1 tbs DRIED THYME

1 tbs DRIED PARSLEY

PINCH OF MACE (OR NUTMEG)

 

 

METHOD..

Boil, with bay leaves, carrot and swede until soft. Drain and mash (keep water for stock).

Fry onion with garlic in marg until onion is translucent.

Add oatmeal, cook for couple of minutes.

Add stock cube dissolved in some of the stock.

Finally add mash, beans, lentils and everything and give a good mix!

Donít forget salt and pepper and if to dry and more water.
